Pesto Pasta With Tomatoes and Feta

Pasta with tomatoes and pesto

This is the perfect potluck or picnic recipe. You can make it in advance and keep in in the fridge until you need it. It’s easy to make and is a perfect accompaniment to your home grown cherry or grape tomatoes.

  • ½ package bowtie pasta or tri-color rotini pasta (8-10 oz)
  • 1 jar of pesto (8 oz)
  • 1 block of feta (8 oz)
  • 14-18 cherry or grape tomatoes (to your taste)

Cook the pasta according to the package directions. Drain and set aside in a large bowl. Mix the pesto into the pasta, a large spoonful at a time.

Cut the tomatoes in half and add to the pasta. Chop the feta in to small chunks and stir into the pasta.

You can add other things that you might like to this recipe. One of my favorite additions is chopped artichoke hearts. If you like the flavor to be a little lighter, don’t add quite as much pesto. It’s a matter of taste.

This dish has been a favorite of kids and adults at every potluck I have taken it to and it can be prepared in a very short period of time. It’s best when used with homegrown tomatoes, but in the winter, store bought ones will suffice. For those of you who make your own pesto, I bet it’s even yummier!
